Deviled Egg Variations with Foolproof Hardboiled Eggs Instructions Recipe

Stop turning failed hardboiled eggs into egg salad, although egg salad can be wonderful.

There are several ways to hardboil eggs, but the method suggested below works well.

(What causes the green tint to the edge of the yolks is boiling the eggs too long.)

Note: I usually add an extra egg to boil, so I can overstuff the 12 egg halves, using the extra yolk.

Included are some deviled egg fillings:

Tex-Mex Bacon Chipotle
Granny's Old-fashioned
Dijonnaise
Shrimp Remoulade
Smoked Oyster with Curry

Directions

  1. Buy eggs 3-4 days in advance.
  2. Cover them in cold water by one inch.
  3. Bring to a boil, turn down heat to simmer eggs 4 minutes.
  4. Remove from heat. Cover. Let sit 10-12 minutes.
  5. Meanwhile, prepare a bowl of ice water.
  6. Plunge eggs into cold water. Wait 5 minutes.
  7. Tap each egg on a counter, cracking the shell all over, roll a few times, and begin peeling from the large end.
  8. Cut in half, remove yolk. Put yolk in a small mixing bowl, mash.
  9. Egg Filling Directions:
  10. Mash egg yolks well.
  11. Mix with mayonnaise and other ingredients.
  12. Place in a plastic baggie and cut a small hole on the bottom of one side.
  13. Fill the egg halves.
  14. Garnish.
