Asparagus risotto

Asparagus risotto by Alida

I find cooking asparagus in a risotto makes the dish particularly creamy. As for any risotto you have to add a nod of butter at the end. In Italy we call this "mantecare" which means stirring the butter into the risotto after it has been cooked. This will make it creamy and translucent and will add extra flavour.

Sesame-Crusted Tuna with Wasabi-Ponzu Sauce

Sesame-Crusted Tuna with Wasabi-Ponzu Sauce by Ferihan

This tuna recipe takes on an Asian flair with a coating of sesame seeds and a sauce of wasabi paste, soy sauce and fresh ginger. It is so easy and you can do it with salmon too. The Wasabe -Ponzu Sauce can also be used as salad dressing. I served it on Spring Salad mix with Arugula and it was light, low in calories and high in…

Taco Skillet

Taco Skillet by Wendi Taylor

It's sort of like hamburger helper, only it doesn't involve noodles or a box mix. And it tastes a whole lot better Variations: Add 1/2 cup frozen corn or 1 cup cooked pinto beans during step four. Top with sour cream, sliced black olives, shredded lettuce, sliced avocado, or crumbled corn chips. Note: I recommend using…

Gluten Free Spaghetti and Mushroom Meatballs

Gluten Free Spaghetti and Mushroom Meatballs by Linda Simon

There is an explosion of choices now. I counted 8 different brands of spaghetti in the ever-expanding gluten free section of my regular grocery store today. What you really want to know is: What is available in my store? How can I be sure it is gluten free? Does it taste, look, and behave like “regular” pasta? How much…

Royal chicken salad

Royal chicken salad by Peter Brown

I saw this recipe on IAfrica .com by Henrie Geyser. As it is the Jubilee year of Queen Elizabeth thout I would pass it on. Tongue in cheek we could, call this dish Jubilee Chicken seeing that it happens to be one of Her Majesty's favourite dishes and there was that big river pageant in her honour in June. Some of the traditional…

Mushroom Agnolotti with Pumpkin Sauce and Garlicky Spinach

Mushroom Agnolotti with Pumpkin Sauce and Garlicky Spinach by Colleen Mcconnell

I’ve experimented with different versions of pumpkin pasta sauce over the years, and this version might just be my best yet. I used evaporated milk to get a little creaminess without having to use heavy cream. I also added a little bit of freshly grated parmesan cheese, and simply seasoned it with a touch of fresh sage, white pepper,…
