Fat Free Sweet Potato Souffle Recipe

If you live in the Carolinas you are pretty much required to love sweet potatoes. And generally they’re pretty healthy but to make them really tasty traditional cooking adds lots of sugar and butter. I wanted to keep the yum factor but reduce the unhealthy factor. Try this version below using a few substitutions including pureed peaches.

Ingredients

  • 3 med sweet potatoes
  • 3 packages sweetener
  • 4 egg whites
  • ¼ teaspoon salt
  • ½ teaspoon nutmeg
  • ¾ cup canned peach slices, drained

Directions

  1. Peel and cook sweet potatoes.
  2. Drain and mix smooth with hand mixer.
  3. Add sweetener, whites, salt and nutmeg. Mix well.
  4. Puree peaches in blender.
  5. Add peaches and mix well.
  6. Divide into 6 lightly greased ramekins.
  7. Bake at 350 degrees for 30 minutes.
  8. (BTW, to me, medium sweet potatoes are about 4”-5” long and about 2” across)
  9. Serves: 6
