I love apple turnovers. It’s like having a slice of apple pie all wrapped up in its own package. Delicious! When I was a child one of my favorite things was the apple turnovers you could buy in the dairy case and I could assemble and bake them myself. I thought how easy those would be to make from scratch, well almost from scratch. I did do a little cheat and used crescent rolls that I had on hand. With just a very few ingredients you can make these for breakfast, an afternoon snack or for something different for dessert. This recipe makes four turnovers.

  • 1 cup apples, peeled and chopped
  • 1 tablespoon apple juice
  • 1/2 teaspoon cinnamon
  • 1/4 cup sugar
  • 1 package crescent rolls
  • Glaze:
  • 1 to 2 tablespoons milk
  • 1/2 cup powered sugar

  1. Grease a cookie sheet. Open the crescent roll package. Take two triangles and place them together on the sheet to form a rectangle. There are eight triangles and when placed together you should end up with four rectangles. Press the seams together tightly so that the filling does not leak out. Preheat oven to 400.
  2. Make the filling:
  3. Put apples, cinnamon, apple juice and sugar in a saucepan on low heat. Stir constantly so that the sugar does not burn on the bottom of the pan. Cook until the apples are soft, approximately 15-20 minutes. This should thicken as you cook, but if it does not thicken to your liking just add some cornstarch (mixed with water first) stir and it should thicken up nicely.
  4. When the apples are soft divide the mixture evenly up among the four rectangles. Place in the approximate center of each. Take one corner and fold it over to form a triangle. Roll the dough up a little on all sides to seal tightly. Put in the oven and bake 10-15 minutes. Watch them and when they are golden brown they are done!
  5. Let them cool before you glaze them. Mix the milk and powdered sugar together. Start with 1 tablespoon and add milk to achieve your desired consistency. Drizzle over each turnover.
