      Frank, besides my brother that makes the best eggplant parmesan, your Italian cooking is awesome; this is the best compliment you can get from a generations of 100% Italians. Even your tripe recipe is in my family tradition, and even more ironic is my mother's name is angela/angelina. Thanks for posting your recipes, I treasure knowing there truly is an Italian that cooks like my own family. For your gnocchi, try "a little grating cheese".
