I love zucchini. I could eat it every day and often do in the summer. Nothing better than a big plate of zucchini for dinner. This recipe is easy and delicious and brings out a slight sweetness to the zucchini.

Directions

  1. Preheat over to 350 degrees. Spread the olive oil on a cookie sheet with a pastry brush. Cut the ends off each zucchini, cut 1/4 inch slices lengthwise of each zucchini. An individual medium zucchini yields about 4 to 5 slices. Place the slices on the cookies sheet. Brush each slice with the pastry brush. This will lightly coat the slices with olive oil. Place in oven. Bake for approximately 20 minutes. Turn the zucchini after 10 minutes. Watch so that the zucchini starts to brown, but don’t let it over cook. You don’t want it to be too soft. Remove from oven and sprinkle with salt and pepper. Yields 4 servings.
