Tuna with Moroccan Spices and Chermoula

Tuna with Moroccan Spices and Chermoula by John Spottiswood

This is just an outstanding appetizer. The spices do not overwhelm the flavor of the tuna, but instead complement them perfectly. We served this to four good friends, and we demolished it. The main course afterwards was also wonderful, but this is an appetizer that will outshine most entrees.

Moroccan Bean Dip - Bessara

Moroccan Bean Dip - Bessara by John Spottiswood

If you like hummus, you will also like this simple and tasty bean dip. Fava beans are preferred, but Lima beans work well too. You can thin down the dip with chicken or vegetable stock to make a tasty bean soup.

Jamaican "Beef" Patties

Jamaican "Beef" Patties by Kiki Thompson

These are kind of similar to Mexican empinadas, but spicy I was kind of skeptical at first, but you can not tell the difference…it’s all about the seasoning when it comes down…

Koeksisters

Koeksisters by Grant Loney

Koeksisters are basically a South African syrup-coated twisted doughnut (sounds good already!) The Afrikaners have a slightly different koeksuster recipe that is…

Winter Squash with Caramelized Onions Cassolita by John Spottiswood

This was an outstanding dish that we served last night with a lamb tagine. It's fairly easy to put together, and will fill your house with wonderful smells! The sweetness is a nice accompaniment to a spicier dish.

Moroccan Harissa Chicken With Orange Butter Sauce, Carrot Purée and Dandelion Greens

Moroccan Harissa Chicken With Orange Butter Sauce, Carrot Purée and Dandelion Greens by Danielle Pallaske

Chef-Owner of Lucque's, Susan Goin created a combination here that was such a complete thought flavor-profile wise that I couldn't think of a single thing I would change about it or add to it. I had made some plain rice to have on the side and we…
