I think the Boursin Cheese makes the difference in this recipe. Make sure you get the right Boursin as there are several types in the cheese aisle.

  • 1 box chopped spinach
  • 3 Tbsp finely chopped white onions
  • 1/2 cup butter (one stick)
  • 2 Tbsp flour
  • 1 small block of Boursin cheese with herbs and garlic
  • 1 1/2 cups milk or half and half
  • 1 1/2 cup bread crumbs

Directions

  1. Thaw spinich, drain well and wring out spinich dry in hand towel. Take 3 Tbsp butter and 3 Tbsp onions and cook in frying pan until onions are translucent. Add two more Tbsp butter and melt. Add 2 Tbsp flour and cook stirring frequently for 3 minutes. Add milk (or half and half) slowly. Break up cheese and add to pan. Stir well and add spinich along with salt and pepper to taste.
  2. Pour mixture in small baking dish.
  3. Take remaining butter and melt in separate pan. Add bread crumbs until moist (not browned). Place on top of spinich mixture and bake 20-25 minutes in 350 degree oven.
