  • 1 cup buttermilk

  • 3 strips thick-cut bacon, chopped
  • 12 ounces, stemmed and chopped collards (about 2 bunches)
  • 1 cup grated white cheddar cheese (packed)
  • 1 cup grated Monterrey Jack cheese (packed)
  • 1 cup grated Asiago cheese (packed)
  • 1 cup grated smoked Gouda cheese (packed)
  • 4 tablespoons unsalted butter
  • 4 tablespoons all-purpose flour
  • 4 cups low-fat milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 pound elbow, cavatappi, or penne pasta
