Fall Spiked Cider Float Recipe

In my dreams I would drink one of these while laying in a hammock thinking about the crisp air, pretty leaves, sweaters and boots, football, pumpkins, and apples. These are things I love about Fall.

Floats are wonderfully nostalgic aren't they? Go ahead and make this drink today because Fall is here and you deserve to enjoy it in a cocktail form!

For the gremlins in the house, nix the alcohol and they'll love it too.

Ingredients

  • Cinnamon Simple Syrup:
  • 1/4 Cup Water
  • 1/4 Cup Granulated Sugar
  • 1/2 Tsp. Ground Cinnamon
  • 1 Cinnamon Stick
  • Spiked Cider Floats:
  • 2 Cups Apple Cider, Chilled
  • 1/4 Cup Cinnamon Simple Syrup
  • 1/4 Cup Dr. McGillicuddy's Apple Schnapps (See Tip)
  • 2 Tbsp. Jim Beam Bourbon
  • 5 - 6 Scoops Vanilla Bean Ice Cream

Directions

  1. For The Cinnamon Simple Syrup: Combine the water, granulated sugar, ground cinnamon and cinnamon stick in a small saucepan.
  2. Place over medium-high heat, and allow to cook until the sugar is dissolved, stirring frequently. This should take about 2 - 3 minutes.
  3. As soon as the sugar is dissolved, turn off the heat and allow the syrup to cool to room temperature.
  4. When the simple syrup is cool, strain through a fine mesh sieve into a clean container, cover and store in the fridge until ready to use.
  5. For The Spiked Cider Floats: Place two mugs in the freezer about an hour before you'd like to serve the floats. Everyone loves a frosty mug!
  6. Place 2 - 3 scoops of vanilla ice cream in each mug, depending on how much ice cream you like.
  7. In a small pitcher or cocktail shaker, combine the apple cider, cinnamon simple syrup, schnapps and bourbon. Shake to combine.
  8. Pour the apple cider over top the ice cream in the mugs.
  9. Garnish with a cinnamon stick and serve with a straw and a spoon. enjoy!
  10. Tip: I wouldn't recommend Sour Pucker or Sour Apple Schnapps in this. The color and flavor profile is not compatible in my opinion.

        It's great! Just a fun spin on the traditional float. I figured if you can use different flavored sodas, why not try this. My next experiment will be using cherry cider. Door County here in Wisconsin have fabulous cherries that make wonderful desserts, wine and cider.
