  • 6 Tbsp. cider vinegar
  • 1 Tbsp. red wine vinegar plus
  • 1 tsp red wine vinegar
  • 3 Tbsp. water
  • 3 Tbsp. oil
  • 3 Tbsp. chopped shallots
  • 2 Tbsp. honey plus
  • 2 tsp honey
  • 1/2 tsp coarse salt Red pepper flakes to taste
  • 12 c. sliced mixed cabbage 1/3" thick (such as red, green and savoy)
  • 2 x tart apples quartered, cored, and shredded in food processor
  • 3/4 c. small-diced celery
  • 1/4 c. snipped chives
  • 7 x bacon slices cooked crisp, and crumbled

Directions

  1. Combine the cider and red wine vinegars, the water, oil, shallots, honey, salt and red pepper flakes in a small dish.
  2. Place the cabbage, apples, celery and chives in a large bowl. Add in the dressing. Toss till well coated. (This can be made a day ahead and refrigerated.)
  3. Serve chilled. Just before serving, add in the bacon; toss well. Taste; adjust the seasonings, honey and vinegar as necessary. Serve immediately (while the bacon is crisp).
  4. This recipe yields 8 servings.
