I make this salsa, if I can't find good tomatoes.

The cost of this is more like 38 cents, not what is stated. If you do it in bulk and can it, it's even cheaper.

  • 14.5 oz. can petite diced tomatoes, drained - save liquid
  • 1 small jalapeno, blackened
  • 3-4 scallions, chopped
  • 1/2 tsp. olive oil
  • juice of 1/2 lime
  • 1 tbs. cilantro leaves
  • 1/2 tsp. garlic powder
  • don't add salt until you taste the salsa

Directions

  1. Blacken the jalapeno and put it in a covered bowl.
  2. Saute onion in oil until translucent.
  3. Seed jalapeno, coarsely chop.
  4. Put everything in a blender, and process until smooth. If the blender won't work, add a bit of the tomato liquid.
  5. Best served warm, or room temp.

    I always try to perfect my salsa. Different variations too. I like this one... I could add it as well.
