Easy Corn Casserole Recipe

My family loves corn anything and this will be a regular thing at our dinners. Thanks to my friend Jaynee Levy-Polis for the recipe.

Ingredients

  • 1 can whole kernel corn, drained
  • 1 can creamed corn
  • 2 eggs, beaten
  • 1 stick (1/4 pound) butter, melted
  • 4 Tsp all purpose flour (heaping)
  • 2 Tsp sugar (I use Splenda whenever possible)
  • 1/4 cup bell pepper, sliced (your choice of color)
  • 1 cup milk (recipe called for whole milk, I used skim)
  • 1/2 cup shredded cheddar cheese
  • Salt and Pepper to taste

Directions

  1. Combine all ingredients
  2. Pour into greased casserole dish
  3. Bake at 350 for 1 hour, 20 minutes

      I use xylitol as my non-nutritive sweetener of choice. Just another option, if it is needed.
