Cumin Rice by Joyce LeungThis rice is a delicious mix of cumin and cinnamon. It provides a nice, slightly sweet flavor, that is a perfect complement to any middle eastern dish. The only dishes I would avoid serving this with are sweet dishes with dates, figs, etc. I served it with my Braised Lamb with Beans. It was great! |

Black-Eyed Peas with Coconut Milk by Mihir ShahI adapted this from a recipe I found in the San Francisco Chronicle. My parents have told me that eating Black-Eyed Peas for the New Year was good luck. I made these for my New Year's Eve party and they were a big hit. Went really well with the Steamed Salmon I prepared. |

Moroccan Split Pea Soup by John SpottiswoodThis is a delicious and beautiful recipe I adapted from one in Paula Wolfert's beautiful book "the food of morocco". The split pea soup has wonderful Moroccan flavors, and it gets a beautiful touch when you drizzle homemade pepper oil on top. This is a super easy trick which adds a nice kick to the already flavorful soup. It's… |

Moroccan Bread by Amos MillerIt is interesting to me that one of my grandfathers, a West Virginian who lived at the end of Horsemill Hollow, always referred to bread as 'the staff of life'. As anyone who has traveled to North Africa knows, bread is a special food, treated with the utmost respect and central to every meal. My Mountaineer gramps would have much… |

Mangoob or Mangoub (Moroccan Fava Bean Salad) by mamatkamalThis is one of the most popular Moroccan salad called Mangoob, and it is mostly served as a side dish, and usually accompanies fish tagines, or fried fish, along with some nice home-made bread. Moroccan Beet Salad by John SpottiswoodThis is a classic beet salad. If you like beets, you're going to really enjoy this. My personal preference is to boil the beets as little as possible That way they still have a crunch to them but aren't as hard as raw beets. I think raw beets are perfectly delicious, and I don't like them soft, so I boil them just enough to soften… |
