This is an amazing simple dish that stands up well to much more complicated potato au gratin recipes. I adapted it from a recipe in the Sacramento Bee by Ann Freeman. You may not want to tell your guests how easy it is! That said, this dish was completely demolished at our recent Christmas brunch while more complicated dishes remained half uneaten. So long as you're not calorie counting, it's worth the five minutes invested to give this dish a try!

Directions

  1. Preheat your oven to 325 degrees.
  2. Heat the butter, cream, and salt in the microwave or a small sauce pan. Put the hash browns in a rectangular baking dish. Pour the butter mixture over the hash browns as evenly as possible. Sprinkle the parmesan over the top.
  3. Bake 1 hour.

    This dish surprised me. I wouldn't put it up there with my Dad's Gruyere Potatoes, which he usually serves on Christmas. http://cookeatshare.com/recipes/potatoes-gratin-w-dill-gruyere-68 But for the effort, these are amazing!
