Buffalo Wing Wanna Be (Hot Wraps) Recipe

This is adapted from a recipe in Cuisine magazine seven years ago. A less guilt and lower fat alternative to fried or oven roasted wings. They make for fun finger food and can be used on game day as an appetizer while watching the big football game. To make a complete meal add an interesting side dish. The addition of honey and lime to the bottled wing sauce tones down the heat so those with less tolerance can enjoy as well. Serve Taco sytle with the lettuce leaves. Bibb or Boston lettuce works well as it is pliable and holds the filling reasonably well.

Directions

  1. Stir together all sauce ingredients; chill until ready for service.
  2. Prepare vegetables and lettuce; chill until ready for service.
  3. Whisk wing sauce, honey and lime juice until completely combined. Set aside.
  4. Saute chicken/Cajun seasoning over medium-high heat in oil. If using breasts do not completely cook as they will become dry. Drain liquid. Add sauce mixture; simmer until almost dry.
  5. Wraps are ready for service. Assemble Taco style.

        The Lime juice and honey tone down the heat dramatically but it still has some spice to it. Use Bulliard's wing sauce rather than a hot one like Frank's. You could cut the hot sauce back from a 1/4 cup to an 1/8 and add an 1/8 cup of chicken stock before reducing down with the chicken pieces.
