Raisin Bran Cranberry Muffins Recipe
I love recipes that use ingredients that I always have on hand. This is one and as far as muffins go it’s about as moist as you can make!
Ingredients
- 3 cups raisin bran cereal
- ½ cup milk
- 1/3 cup dried cranberries
- 2 cups all purpose flour
- 4 teaspoons baking soda
- 2 teaspoons cinnamon
- ½ teaspoon salt
- 2 eggs, beaten
- ¼ cup oil
- ¼ cup applesauce
- 2/3 cup brown sugar, packed
Directions
- Combine cereal, milk and cranberries. Mash a little and let stand 10 minutes.
- In a separate bowl mix flour, baking soda, cinnamon and salt.
- Add egg, oil, applesauce and sugar to the cereal mixture. Stir well.
- Add flour mixture to cereal mixture. Stir well.
- Line a muffin pan with 12 wrappers and fill each to top with batter.
- Bake at 400 degrees for 22 minutes.
