Easy Cinnamon Apple Strudel by Nancy MiyasakiThis is super simple and truly delicious. I made it for John's birthday dinner, since he loves cinnamon apple desserts with vanilla ice cream. It's light and flavorful without being too rich. We finished it all in one night between the six of us. Mmm! |

Mango Chipotle Sauce/Glaze by Bob VincentThis is a good sauce/glaze for almost anything. It is easy to make and stores refrigerated well for several days or if air tight much longer. I use it on grilled fish, chicken or pork. It can be used hot as a finishing sauce or cold as a glaze during the last few minutes of grilling. Adjust the chipotle peppers to your taste. |

Orange Chipotle Vinaigrette by Bob VincentThis recipe is adapted from one by Julie Campoy in her book Julienne. I made some changes to it. I added garlic, used more honey and reduced 50% more orange juice. I also added Mexican oregano and cut back on the cumin a bit. This produces a thin vinaigrette. Strawberry and Rhubarb Tapioca Pudding by Salad FoodieA delightful tapioca pudding for a special occasion. So ruby-red pretty, and with a small scoop of vanilla ice cream on top, you'll think you died and went to heaven. If fresh rhubarb is not available substitute frozen, and mash or cut up after simmering if necessary. |
