Marinated Asparagus by Robyn SavoieThis versatile recipe made with fresh asparagus can be made year around. Serve it cold or warm as side with any meal. My favorite way to serve this is grilling it. It produces rave reviews every time. Even from guests who may not be fans of asparagus. |

Creole Shrimp Salad by Amos MillerThe perfect main dish for brunch, a salad for dinner, or an appetizer! This New Orleans-inspired salad will please everyone who loves shrimp served in a deliciously refined way. Southwestern Shell Pasta Salad by Salad FoodieChop, chop, chop and get your frustrations out making this pasta salad with south-of-the-border appeal. Choose your heat level by amount of peppers, hot sauce and chilies you add. This yields a generous bowl and serves 12-14. Make this ahead of time and chill ~ if you can wait and can keep everyone out too! |

Make-over Spaghetti & Shrimp Salad by Salad FoodieOriginally mayo was the dressing for this salad recipe from a friend long ago, but I decided to give it a make-over. Adding a few new veggies and seasonings, and subbing an oil-based dressing, made it lighter and brighter. The recipe makes enough for a crowd or potluck, so cut down by one third or two thirds if needed. |

Orange Chipotle Vinaigrette by Bob VincentThis recipe is adapted from one by Julie Campoy in her book Julienne. I made some changes to it. I added garlic, used more honey and reduced 50% more orange juice. I also added Mexican oregano and cut back on the cumin a bit. This produces a thin vinaigrette. If you want it thicker whisk in a couple of tablespoons of mayonnaise.… |

Fideo (Cut) Spaghetti and Shrimp Salad by Salad FoodieFideo is a thin spaghetti cut into 3/4-inch pieces used primarily for soups, or if the spaghetti is broken in half or less it is used for certain Mexican dishes. Of course you can break regular thin spaghetti in small pieces yourself for this salad, but using the prepared pasta is so much simpler and ideal. This unique pasta salad… |

Warm Brussles Sprouts Salad with Almonds and Parmesan by Nancy MiyasakiI adapted this from a Oprah recipe. She makes the salad with raw brussel sprouts. I couldn't quite trust that, so I blanched them lightly before slicing. This produced a delcious and slightly warm salad. I should have tried some raw and some cooked to see which method is best. Maybe one of you can do that and let us know? |

Two-Potato Salad With Bacon And Corn by Robyn SavoieDuring westward expansion, potatoes were at a premium and often sold for at least a dollar a pound. Sweet potatoes, which keep well over several months, were also popular. |
