Directions

  1. Preheat Oven 350 degrees:
  2. Combine the ingredients for the rub in a small bowl.
  3. Place cleaned chicken in a baking pan. Rub the chicken with the rub-mixture.
  4. Place carrots, celery and garlic around the chicken. Fill the baking pan half-way with water.
  5. Bake the chicken 55-60 minutes or until the juices run clear.
  6. For the Dumplings:
  7. Place the dry ingredients in a bowl. Add the margarine. Cut the margarine until crumbly. Add the milk while stirring.
  8. Take the broth and veggies from the cooked chicken and place in a sauce pot.
  9. Heat the broth to simmering and spoon dumplings into the pot. Cover and let simmer for approximately fifteen minutes.
  10. Serve the chicken broth and dumplings with the chicken.

    I just made chicken and dumplings myself. Your recipe sounds easier than mine, boil mine on the stove top. I add thyme, marjoram, and sage to my dumplings. Your rub sounds good too. Thanks for sharing, going to try this recipe.
