  • 2 tbsp butter
  • (1 lb) boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 tsp finely chopped fresh garlic
  • 1/4 cup chopped green onions
  • 1 medium size red, yellow or green bell pepper, coarsely chopped
  • (8 oz) sugar snap peas, tips and strings removed, cut in half
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/4 cup dry white wine or water
  • 2 cups hot cooked wild rice

Directions

  1. Melt butter in A 10" skillet until sizzling; add chicken and garlic. Cook over medium-high heat, stirring often, until chicken is no longer pink (5 to 7 minutes).
  2. Stir in all remaining ingredients except wine and rice. Continue cooking, stirring often, until vegetables are crisp-tender (3 to 5 minutes).
  3. Stir in wine. Continue cooking, stirring constantly, until heated through (1 to 2 minutes). Serve over rice.
