This basic artichoke recipe is the perfect side dish as it complements almost any main course. It's flagrant and delicious. I used to shy away from artichokes because I did not know how to prepare them. Once I learned, I realized it was not so difficult and had missed out on such a great veggie! Hope you enjoy the recipe.

Directions

  1. *Clean the Artichoke: 1)Wash 2)Trim off the top about 1 inch or so 3)With scissors, cut the sharp end of the leaves 4)Chop off the hard stem 5)After it's cooked, scoop out the center flowers.
  2. *Add the artichoke to boiling water, cook on medium for about 30-40 minutes. Drain.
  3. *Place the artichoke on a serving platter.
  4. *Drizzle olive oil and lemon juice.
  5. *Salt to taste.
  6. *To eat, peel each leaf and eat. It's definitely a finger food!

      artichokes are good any way. If you find young ones you can boil them in lemon water before cleaning them for 25 min. , then clean and quarter and then use them in a salad. It's even easier!
