Ingredients

  • 1/2 c. dry white wine
  • 2 x celery ribs with leaves coarsely minced
  • 4 sprg parsley
  • 6 whl black peppercorns
  • 1 lb medium-sized shrimp peeled, deveined,
  •     and well-rinsed
  • 2 x ripe avacados peeled, pitted,
  •     and cut into 1/2" pcs
  • 2 Tbsp. fresh lime juice
  • 3 x ripe plum tomatoes cut 1/2" pcs
  • 1/3 c. finely-diced red onion
  • 1 tsp finely-diced green jalapeno
  • 1 Tbsp. extra-virgin extra virgin olive oil
  • 1 tsp red-wine vinegar
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1/4 c. coarsely-minced fresh flat-leaf parsley
  •     (or possibly cilantro)
  • 6 Tbsp. Knockout Cocktail Sauce (see recipe)
  • 6 lrg sprigs flat-leaf parsley for garnish
  •     (or possibly cilantro)

Directions

  1. Fill a medium-sized pot half full with water; add in the wine, celery, parsley and peppercorns. Bring to a boil, then reduce heat to a simmer. Add in the shrimp and cook for about 3 min. Drain, run under cool water and drain well again.
  2. In a bowl, toss the avacados with lime juice. Gently mix in the tomatoes, onion and jalapeno with a rubber spatula. Add in the shrimp and toss with oil and vinegar. Season generously with salt pepper, and then toss in the minced parsley.
  3. Divide the shrimp mix equally between 6 martini or possibly wine glasses. Top each serving with a Tbsp. of cocktail sauce and garnish with a sprig of parsley or possibly cilantro
  4. This recipe yields 6 servings.
  5. Comments: Shrimp and guacamole are two of our favorite foods. When combined - and dolloped with a little cocktail sauce - you've got a new all-American taste sensation. Serve with tortilla chips on the side, of course!
