- 1 (28 oz.) can crushed tomatoes
- 1 (14.5 oz.) can fire roasted diced tomatoes
- 1 bunch cilantro, chopped
- 1 bunch green onions, chopped
- 2 t. minced garlic
- 1/2 T. fine sea salt
- 2 (8 oz) can diced mild green chilis
- 3 large Roma tomatoes, diced
- 1 medium onion, diced
- 1 large diced jalapenos
- 1/2 T. garlic powder
- fresh ground pepper

,%20my%20best%20friend%20and%20I%20had%20a%20favorite%20restaurant.%20%20It%20mattered%20not%20if%20we%20were%20meeting%20for%20a%20weekday%20lunch%20in%20the%20summer%20or%20grabbing%20a%20bite%20before%20we%20went%20out.%3C/p%3E%3Cp%3EWe%20could%20always%20be%20found%20at%20Chimi%E2%80%99s.%3C/p%3E%3Cp%3EAnd,%20we%20always%20ordered%20the%20same%20thing:%20%20Nachos.%20%20%20Those%20nachos%20were%20delicious%20and%20had%20refried%20beans,%20two%20or%20three%20cheeses,%20guacamole,%20sour%20cream,%20shredded%20chicken%20and%20lots%20of%20jalapenos.%20%20%20We%20loved%20these.%3C/p%3E%3Cp%3ESadly,%20I%20think%20the%20menu%20has%20changed%20over%20the%20past%20twenty%20years%20and%20these%20nachos%20probably%20aren%E2%80%99t%20the%20same.%20%20I%20am%20sure%20our%20tastes%20have%20changed%20as%20well.%3C/p%3E%3Cp%3EI%20haven%E2%80%99t%20been%20to%20Chimi%E2%80%99s%20in%20years.%3C/p%3E%3Cp%3EBesides%20the%20nachos,%20their%20house%20salsa%20was%20divine.%20%20%20I%20saved%20a%20clipping%20from%20our%20local%20paper%20about%20fifteen%20years%20ago%20with%20the%20secret%20recipe%20for%20their%20Salsa%20Fresca.%20%20%20I%20have%20since%20misplaced%20that%20clipping,%20but%20I%20almost%20have%20the%20recipe%20memorized.%20%20%20In%20an%20attempt%20to%20recreate%20this%20long-lost%20recipe,%20I%20decided%20to%20finally%20write%20down%20from%20memory%20the%20old%20recipe.%20%20I%20am%20sure%20that%20I%20have%20added%20and%20subtracted%20ingredients%20from%20the%20original,%20but%20this%20is%20my%20ode%20to%20Chimi%E2%80%99s%20Salsa%20Fresca.%3C/p%3E%3Cp%3ERestaurant%20Style%20Salsa%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20mix%20the%20canned%20tomatoes,%20cilantro,%20green%20onions,%20garlic,%20salt%20and%20green%20chilis.%20%20%20Add%20the%20remaining%20ingredients.%20%20Mix%20well.%3C/p%3E%3Cp%3EKeep%20refrigerated.%20For%20a%20smaller%20portion,%20cut%20recipe%20in%20half.%3C/p%3E%3Cp%3EThis%20does%20indeed%20make%20a%20large%20amount%20of%20salsa,%20about%20two%20quarts,%20but%20it%20is%20the%20perfect%20recipe%20for%20the%20dead%20of%20winter.%20%20%20Adding%20the%20few%20fresh%20tomatoes%20to%20the%20canned%20goods%20make%20this%20taste%20like%20a%20summer-fresh%20salsa.%3C/p%3E%3Cp%3EI%20made%20up%20a%20batch%20recently%20for%20The%20Hubs%E2%80%99%20work%20place%20as%20they%20celebrated%20%E2%80%9CTaco%20Tuesday.%E2%80%9D%20%20%20(How%20fun%20is%20that?)%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
