Ingredients

  • 1 tub refrigerated fresh salsa (check the supermarket refrigerated section or possibly a local Mexican restaurant)
  • 2 can whole black beans, liquid removed
  • 1 sm box frzn corn kernels, thawed and liquid removed Dash of Italian salad dressing (vinaigrette-style) Dash of garlic pwdr Salt/pepper

Directions

  1. Toss beans and corn with salsa. Drizzle with Italian dressing and sprinkle with garlic pwdr, salt and pepper to taste. Refrigerateand serve with tortilla chips. (Sprinkle with minced fresh cilantro if desired.) VARIATION: Substitute 1 1/2 c. small/minced, cooked shrimp and 1 diced avocado for the beans and corn.
