Pizza Soup Recipe
Ingredients
- 1 lb. Italian Sausage (The family farm where we buy our meat makes their own Italian sausages and bratwursts.)
- 2 T. olive oil
- 1 large chopped red onion
- 1 large diced green bell pepper
- 1 large clove garlic, minced
- 1 1/2 cup sliced fresh mushrooms
- 1 c. red wine
- 2 c. beef stock
- 1 cup water
- 1 1/2 c. ditalini or other small pasta
- 1 tablespoon dried Italian seasoning*
- favorite pizza cheese, shredded

I made this last night for our Super Bowl Party. Everyone really like it. I did add one more cup of beef broth, and 1 can of tomato paste as well as some Fennel and basil. I thought it needed a little more spice, but everyone else thought it was good. When making this again I will only add 1 cup of pasta.

%20%20%20It%20was%20rare%20for%20us%20to%20ever%20go%20out%20for%20pizza%20and%20there%20was%20absolutely%20no%20pizza%20delivery%20to%20the%20farm.%20%20%20That%20was%20alright%20because%20mom%E2%80%99s%20homemade%20pizza%20was%20the%20best.%3C/p%3E%3Cp%3EMy%20husband%E2%80%99s%20favorite%20pizza%20came%20from%20My%20Pi%20(which%20is%20no%20longer%20in%20existence%20here).%20%20When%20I%20first%20made%20homemade%20pizza%20for%20him,%20he%20ate%20it%20politely,%20but%20then%20he%20carefully%20gave%20me%20enough%20constructive%20criticism%20to%20duplicate%20his%20favorite%20My%20Pi.%3C/p%3E%3Cp%3EUnfortunately,%20for%20most%20of%20the%20year%20our%20Friday%20nights%20are%20taken%20up%20with%20my%20work,%20but%20I%20still%20try%20to%20make%20at%20least%20one%20evening%20a%20month%20Pizza%20Night%20at%20our%20house.%3C/p%3E%3Cp%3ESo,%20as%20we%20are%20on%20this%20soup%20challenge,%20it%20would%20be%20cheating%20to%20make%20a%20pizza%20for%20dinner.%20%20But,%20as%20I%20did%20with%20our%20favorite%20enchilada%20recipe,%20I%20will%20turn%20our%20favorite%20pizza%20toppings%20into%20soup.%3C/p%3E%3Cp%3EPizza%20Soup%3C/p%3E%3Cp%3ECrumble%20and%20brown%20sausage%20in%20a%20skillet.%20%20Drain%20on%20paper%20towels%20and%20set%20aside.%20If%20your%20sausage%20is%20too%20fatty,%20place%20the%20cooked%20sausage%20in%20a%20large%20strainer%20and%20run%20warm%20water%20over%20it.%3C/p%3E%3Cp%3EIn%20a%20soup%20pot,%20heat%20the%20olive%20oil.%20%20Add%20onions,%20green%20peppers,%20and%20garlic%20and%20saut%C3%A9%20about%20four%20minutes%20or%20until%20soft.%20%20%20Add%20mushrooms%20and%20red%20wine;%20cook%20until%20wine%20is%20reduced%20by%20half.%20%20Add%20tomatoes,%20beef%20stock,%20water%20and%20Italian%20seasoning.%20%20Stir.%3C/p%3E%3Cp%3EAdd%20sausage%20and%20heat%20to%20boiling.%20%20Add%20pasta.%20%20Reduce%20to%20simmer%20and%20simmer%20for%2030%20minutes.%3C/p%3E%3Cp%3E*If%20you%20have%20fresh%20basil,%20stir%20in%20a%20handful%20before%20serving.%20%20I%20had%20some%20frozen%20pesto%20that%20I%20threw%20in%20the%20last%205%20minutes%20of%20cooking.%3C/p%3E%3Cp%3ETop%20each%20bowl%20with%20a%20bit%20of%20cheese%20before%20serving.%20%20Serve%20with%20crusty%20Italian%20bread%20(for%20dipping!)%3C/p%3E%3Cp%3EServes%206-8.%3C/p%3E%3Cp%3EI%20have%20frozen%20LOTS%20of%20our%20leftover%20soups%20so%20I%20wish%20I%20had%20halved%20this%20recipe.%3C/p%3E%3Cp%3ENo%20snow%20is%20forecast%20for%20today;%20we%20got%20another%20three%20inches%20yesterday.%20%20Maybe%20I%20can%20get%20out%20of%20the%20house%20today!%3C/p%3E%3Cp%3EPizza%3C/p%3E){kind=link}
