Pecan Meltaways Recipe

Great for holiday gatherings
Ingredients
- 1 cup butter, softened
- 1/2 cup confectioners' sugar
- 1 teaspooon vanilla
- 2 1/4 cups flour
- 1/4 teaspooon salt
- 3/4 cup chopped pecans
- Additional confectioners' sugar
Directions
- In a large bowl, cream the butter, confectioners' sugar, and vanilla until light and fluffy
- Combine the flour and salt
- Gradually add to the creamed mixture
- Mix well
- Stir in the pecans
- Refrigerate until chilled
- Roll into 1-inch balls
- Place on ungreased baking sheets
- Bake at 350 F for 10-12minutes or until set
- Roll the warm cookies in additional confectioners' sugar
- Cool completely on wire racks
- Roll the cooled cookies again in the confectioners' sugar
