Directions

  1. In a small bowl, soak the fennel seed in the boiling water
  2. Set aside
  3. In a large bowl, cream the butter and the brown sugar until light and fluffy
  4. Beat in the egg
  5. Drain the fennel seed
  6. Combine the flour, baking soda, and the fennel seed
  7. Gradually add to the creamed mixture
  8. Mix well
  9. Roll into 1-inch balls
  10. Place 2 inches apart onto ungreased baking sheets
  11. Bake at 350 F for 10-12 minutes or until lightly browned
  12. Roll the warm cookies into the confectioners' sugar
  13. Cool on wire racks
