Pasta with Spicy Tuna Recipe

Ingredients

  • 400g fettuccine or spaghetti pasta
  • 2 tbs olive oil
  • 1/2 onion (chopped)
  • 2 garlic cloves (crushed)
  • 1 cup cream
  • 2 tbs sundried tomato paste
  • 425g can spicy tuna in oil (drained)
  • 1 cup frozen green peas
  • 1 tbs chopped parsley
  • 100g tomatoes (sliced)
  • 2 tsp capers, rinsed, drained

Directions

  1. Cook pasta according to package instructions or until al dente. Drain and toss with half the oil.
  2. Over medium heat, add garlic and onion and cook 2minutes or until softened.
  3. Stir in cream and paste, add tuna and peas.
  4. Stirfry gently for 1-2 minutes. Stir in half the parsley with the tomatoes and capers.
  5. Add pasta and season.
  6. Stir until just heated through.
  7. Serve sprinkled with remaining parsley.
