Blueberries are so sweet and in season here! Make almost any thing sweet with them. I love this cake in the morning served warm with honey lemon butter spread.

  • 1-1/2 Cups Self-Rising Flour
  • Dash of iodized salt
  • 2 eggs
  • 1/4 scant cup vegetable oil
  • 1/2 cup granulated sugar
  • 1-1/4 cups fresh blueberries

Directions

  1. Pre Heat Oven 375 F
  2. Grease a round cake pan, set aside
  3. In a bowl add flour, eggs, oil and mix until combines, add sugar, salt and run mixer again, fold in fresh blueberries.
  4. Transfer to prepared cake pan and bake for 25-30 minutes.
  5. Delicious served warm!
