Crêpes Filled with Savory Sage Sausage and Buttercup Squash

Crêpes Filled with Savory Sage Sausage and Buttercup Squash by Julie Reihl

I love making crêpes because they are great for filling with savory ingredients for a meal or sweet ingredients for a dessert. Plus you can make the batter ahead of time or the crêpes. The filling being used is a savory combination of sage sausage and buttercup squash. Serves 8 – 10 depending on how much filling you put in the crêpes.

Chicken with Roasted Red Pepper & Chipotle Rice

Chicken with Roasted Red Pepper & Chipotle Rice by Salad Foodie

Starting with a recipe that won a contest sponsored by the USA Rice Federation, I took the liberty to substitute chicken for the original recipe’s fish (see “Useful Links” below for the Tilapia version.) Using prepared jars of red roasted peppers and chipotle salsa cuts down on the preparation, but certainly not the taste of this…

Zucchini and Tomato Pizza for Two....(or more!)

Zucchini and Tomato Pizza for Two....(or more!) by Salad Foodie

I’d run out of inspiration for how to use up summer’s end of zucchini, tomatoes and basil, until I came across a recipe in Vegetarian Cooking for Everyone (Deborah Madison). After finishing off a single piece of this divine pizza, I am moving this recipe to my "Favorite Meals Before I Die" list, it’s that good! This makes a 10" pizza…

Kale Salad with Radishes, Lemon, and Parmesan

Kale Salad with Radishes, Lemon, and Parmesan by Colleen Mcconnell

Sometimes the simplest foods are the best. Matt and I were blown away by the kale salad we tried at City House in Nashville, and our recreation of it has been in our repertoire ever since.

Orangish Chocolatish Cinnamon Rolls

Orangish Chocolatish Cinnamon Rolls by Hina Gujral

Cinnamon rolls were in my baking list from a long time but don't know why I never made them though I really really love them, in my opinion they are one of the perfect treats to enjoy with coffee and they fit in so well in the breakfast, brunch and tea time menu, they are soft, fluffy, buttery and full of cinnamon.

Mediterranean Nachos (Greek Nachos)

Mediterranean Nachos (Greek Nachos) by Denise Sherin

Yummy Greek flavors in nacho form. Instead of sour cream you could use some tzatziki sauce or slice some raw baby spinach leaves. You can also use a flavored feta cheese if you like. To make a heartier dish you can add some shredded chicken or tuna to the tomato mixture.

Delicious Banana Bread

Delicious Banana Bread by Jenny

A few months back my sister told me she baked banana bread. She was delighted with how it turned out for her and suggested I tried it too. To be honest, I wasn’t even keen on trying it. Couldn’t understand why she was so excited about it! But… One day we had some very ripe bananas at home and no one wanted to eat them (well, who…
