  1. Measure into saucepan the brown sugar, salt, butter and corn syrup. Bring to boil and boil 5 min. Remove from heat and stir in vanilla and soda. Pour over popped corn and mix well. Pour caramel corn into a large brown paper bag which's been sprayed inside with Pam cooking spray. Microwave 1 1/2 min. Stir corn. Microwave 1 1/2 min again. Pour out onto waxed paper to cold. Store in airtight container. Don't make in high humidity.
