Coffee Cake with Fillings Recipe

Like most people, I am a knock over for a good cup of coffee and a piece of cake. I have been making this Filled Coffee Cake recipe using many variations over the years and no matter what I try to do difference I end up back to this basic recipe. I hope you will try it. Once you do I am sure this will become one of your favorites as well. As I always say ‘Let your imagination run wild’.

  • DRY INGREDIENTS
  • 3 cups AP flour
  • 3 teaspoons DA baking powder
  • 1 teaspoon salt
  • WET INGREDIENTS
  • ½ cup vegetable oil
  • 1 cup sugar
  • 1 egg
  • ¾ cup milk
  • CRUMB TOPPING
  • ½ cup AP flour
  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup butter, softened
  • 2 tablespoons flour
  • 1 can pie filling (21oz)
  • ¼ cup cold cubes butter, divided

Directions

  1. Preheat the oven to 375F degrees (190C).
  2. Grease and lightly flour a 9 x 13 baking dish.
  3. Sift together the flour, baking powder and salt.
  4. In a mixer bowl using an electric mixer, cream the oil and sugar.
  5. Add the egg and beat well then add the milk and mix on high for 1 minute.
  6. Put the dry ingredients (flour) in the bowl with the wet ingredients.
  7. Gently fold the dry into the wet until just incorporated. Don’t over mix or you will end up with a tough cake.
  8. Put the flour, brown sugar, and cinnamon in a bowl. Add the butter. With your finger tips, mix these ingredients until a coarse crumb has developed.
  9. Pour half of the batter into the prepared baking dish. Sprinkle with some flour.
  10. Using a teaspoon, put small amounts of pie filling so as to evenly distribute the filling over the batter.
  11. Add a few small cubes of butter on the batter.
  12. Gently spoon the other half of the batter over the filling.
  13. Sprinkle evenly with the crumb topping and add a few more small cubes of butter.
  14. Bake in a preheated oven (375F or 190C) on the center rack for 45 minutes.
  15. Remove from oven and allow too cool in the baking dish for 15 minutes.
  16. Slice into desired portions and serve warm with coffee and or a scoop of ice cream.
  17. Suggestions: You can use any canned or homemade fruit filling in this recipe. Also a pudding or custard filling is great. Try a caramel or chocolate filling. Let you imagination run wild.
