This is a delicious simple chicken dish. My husband loves Italian food, so this one was right up his alley. My oldest son Ryan happened to be over for dinner tonight as well, and he said he may have to add this to his favorites list. Trust me he is pretty critical. I thought for sure he would balk at the spinach. Sam told him he couldn't even tell it was spinach, this made me laugh. I guess it is always a good thing when you try something new and the whole family approves.

Ingredients

  • 4 oz. cream cheese softened
  • 1 10 oz pkg of frozen chopped spinach, thawed, well drained
  • 1 1/4 cup of mozzarella cheese, divided
  • 6 tbs. grated Parmesan cheese divided
  • 6 boneless chicken breast pounded into 1/4 inch thickness ( I used 4)
  • 1/2 sleeve of Ritz crackers
  • 1 egg
  • your favorite spaghetti sauce

Directions

  1. Heat oven to 375
  2. Mix cream cheese, spinach, 1 cup mozzarella and 3 tbs. Parmesan cheese until well blended. Spread onto chicken breast. Starting at one short end roll up chicken tightly. Secure with wooden toothpicks if desired.
  3. Beat egg in shallow dish. Mix remaining Parmesan cheese and crushed crackers ( I used my food processor for this) in a separate shallow dish. Dip chicken into egg, then roll in crumb mixture to coat sealing any exposed filling well. Place in a 13 x 9 baking dish sprayed with cooking spray.
  4. Bake for 40 minutes. Top with pasta sauce that has been heated sprinkle remaining mozzarella cheese and pop under the broiler to brown slightly.
  5. I served this with a small side of pasta topped with the remaining pasta sauce.

    This was a great alternative to typical chicken parmesan. My husban is a picky eater and he had seconds (he never noticed he was eating spinach)! Next time I might add some cold butter cubes in my food processor when mixing the crackers and parmesan so they brown up a little more in the oven.
    I've cooked/tasted this recipe!
