Beans Tuscany Improv Recipe

Lacking most of the ingredients for the typical Tuscan Bean recipe I decided to improvise. This dish is quick, easy to make, full of fiber and is low fat.

  • 1 (15 oz.) can of cannellini beans, drained
  • 1 (15 oz.) can of garbanzo beans, drained
  • 1 (15 oz.) can of petite diced tomatoes, drained
  • 1 small to medium leek or small onion, sliced
  • 2 Tbsp. of fresh parsley, finely chopped
  • 1 stalk of celery, sliced diagonally
  • 2 Tbsp. olive oil
  • 1 Tbsp. garlic powder (yep, I was out of garlic cloves too)
  • 1 Tbsp. dried oregano
  • 1 1/2 tsp. ground black pepper
  • 1 cup cooked brown rice

Directions

  1. Heat the olive oil in a large skillet over medium high heat.
  2. Add the onion or leek. Sauté until translucent.
  3. Add the celery and continue to saut&eacute until tender-crisp.
  4. Add the oregano, garlic powder and black pepper.
  5. Reduce the heat. Add the cannellini and garbanzo beans and
  6. mix well. Heat through (about 5 min.). Add the parsely and
  7. tomatoes, mix again, cover and allow to cook over low heat
  8. for about another 10 minutes. Serve hot as a side or main dish.
