I grew up on pressed chicken from a restaurant called "Chongs" in Paducah, KY. Out of the countless Chinese restaurants I've been in across the US, the only place I ever found that had a dish close to Chongs was on North Avenue in Melrose Park (or Elmwood Park), Illinois. It's called North Star. The ingredients from Chongs included chopped fried chicken breasts in a brown sauce. Underneath was chopped lettuce or cabbage, sliced mushrooms, bean sprouts, bamboo shoots, and sliced water chestnuts. It was topped with cracked (very small pieces of) peanuts or almonds and chopped green onion. They had the best pork fried rice, too!

Just wanted to say Thank You! this is great. Jade Palace in Humble Texas was My favorite place to eat out and Their pressed chicken was the best ever.
