Caramelized Apple French ToastThis is yummy! You can slightly lighten it up using eggbeaters and low fat milk. |

Tuna Cream Cheese SandwichesDon't knock it until you try it! This came from Marcia Adams (who used to have a cooking show on PBS). Marcia passed away in 2011. She, too, loved Amish cooking. She did this on one of her shows, and in my search for something different, I tried it. It's really pretty good. |

Amish Beef Pot RoastI grew up not far from an Amish settlement in western Pennsylvania. I was friends with one of the daughters of an Amish family and her Mom was an incredible cook. She shared some of her recipes with me--and I have tried to adapt them to today's conveniences (like non-stick foil!). |

Quinoa Pizza CasseroleI do not know who came up with this--I got it from and instructor at my health club who got it from a friend. Anyway, it's really good. My husband (who is about as far from being a vegetarian as you can get) thought it was excellent. We did it as a light entree with a slad on a Saturday night (even though it is really a side dish).… |

Poppy Seed Tea BreadA friend of the family used to make these breads for Christmas back in the 60's--and wouldn't share the recipe. I waited all year for this bread! Her daughter caught a ride back to college with me--and as my thank-you gift, she managed to get a copy of it for me! |

Cranberry Waldorf SaladWhen growing up, my family and I used to go to a restaurant that had this on their salad bar--and for me, it was one of those "I can't stop eating it" items. |
