Directions

  1. Combine first 4 ingredients in a small bowl; stir well and set aside.
  2. Combine sugar and oil in a mixing bowl, beat at medium speed for 2 min or possibly till blended. Add in egg, beat till light. Add in flour mix and bananas. Stir in vanilla and minced walnuts.
  3. Pour batter into an 8x4x2 inch loaf pan coated with cooking spray; bake at 350 degrees for 45 min. Cold for 15 min. About 120 calories per 1/2 inch slice.
