,%20I%20now%20have%20bronchitis!%20So%20crazy%20me%20ran%20the%20race%20with%20bronchitis.%20And%20then,%20just%20for%20kicks,%20dressed%20up%20as%20Olivia%20Newton%20John%20so%20my%20Richard%20Simmons%20wouldn't%20feel%20left%20out.%20We're%20weird.%3C/p%3E%3Cp%3EAll%20that%20calls%20for%20a%20carb%20load%20breakfast.%20One%20featuring%20two%20of%20my%20favorite%20holiday%20items:%20pumpkin%20and%20nog.%20And%20So%20Delicious?%20You%20hit%20it%20out%20of%20the%20park%20with%20your%20coconut%20nog.%20Um.%20Yum.%20Not%20only%20is%20it%20great%20to%20drink%20with%20rum%20by%20itself%20or%20in%20your%20coffee,%20it%20makes%20a%20great%20addition%20to%20recipes%20because%20of%20it's%20thick%20consistency%20and%20deliciously%20nog%20flavor.%3C/p%3E%3Cp%3ESo%20I%20took%20a%20note%20from%20the%20gang%20at%20So%20Delicious%20and%20tried%20their%20eggnog%20french%20toast%20recipe%20included%20in%20my%20goody%20box.%20Except%20I%20took%20it%20one%20further%20and%20added%20pumpkin%20because%20I'm%20crazy%20like%20that.%20And%20it%20was%20equally%20as%20good.%20Crazy%20good.%3C/p%3E%3Cp%3EThanks%20guys!%3C/p%3E%3Cp%3EAdapted%20from%20a%20recipe%20courtesy%20of%20So%20Delicious%3C/p%3E%3Cp%3EYield:%20about%208-10%20slices%20french%20toast%3C/p%3E%3Cp%3ENeed:%3C/p%3E%3Cp%3E8-10%20slices%20Dave's%20Killer%20Bread%20(The.%20Best.%20There%20is%20no%20other%20for%20us.%20Really.)%3C/p%3E%3Cp%3EEarth%20Balance%3C/p%3E%3Cp%3ECinnamon%20Sugar%20(optional)%3C/p%3E%3Cp%3ESyrup%20(optional)%3C/p%3E%3Cp%3EDo:%3C/p%3E%3Cp%3EIn%20a%20bowl,%20mash%20banana%20really%20really%20well%20until%20you%20have%20a%20paste%20with%20very%20few%20lumps.%20Add%20pumpkin%20and%20Coconut%20nog%20and%20stir%20to%20combine.%3C/p%3E%3Cp%3EAdd%20cinnamon%20and%20vanilla%20and%20stir%20to%20combine%20again.%3C/p%3E%3Cp%3EHeat%20your%20griddle%20to%20fairly%20high%20heat%20and%20add%20a%20pat%20of%20Earth%20Balance.%3C/p%3E%3Cp%3EWhen%20griddle%20is%20hot.%20Dip%20the%20first%20side%20of%20your%20bread%20into%20your%20nog%20mixture.%20Flip%20and%20dip%20again.%20Before%20putting%20on%20griddle,%20gently%20shake/wipe%20some%20of%20the%20excess%20batter%20off.%20I%20found%20this%20helped%20with%20the%20cooking%20process.%3C/p%3E%3Cp%3ECook%20on%20one%20side%20until%20golden%20brown%20then%20flip%20and%20repeat.%3C/p%3E%3Cp%3EServe:%3C/p%3E%3Cp%3EYou%20can%20top%20your%20french%20toast%20with%20a%20light%20shake%20of%20cinnamon%20sugar%20or%20syrup,%20though%20I%20didn't%20think%20it%20really%20needed%20anything%20on%20top.%20Maybe%20a%20little%20more%20Earth%20Balance.%3C/p%3E%3Cp%3EServe%20with%20a%20little%20Smart%20Balance%20bacon%20and%20fruit%20and%20you're%20ready%20to%20conquer%20giant%20wooden%20walls,%20drainage%20pipes%20or%20taking%20your%20child%20to%20kindergarten.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E){kind=link}
