Valentine’s Day Sprinkles Cookies in Vanilla and Chocolate Recipe

.%20So%20when%20Alex%E2%80%99s%20teacher%20asked%20me%20if%20I%20could%20provide%20the%20treats%20for%20her%20Valentine%E2%80%99s%20Day%20party,%20I%20immediately%20knew%20what%20I%20was%20making.%3C/p%3E%3Cp%3EThen,%20the%20day%20before%20the%20party%20as%20I%20was%20setting%20butter%20out%20to%20soften,%20I%20suddenly%20remembered%20that%20quite%20a%20few%20of%20Alex%E2%80%99s%20friends%20hate%20chocolate.%20No%20that%20was%20not%20a%20typo.%20And%20Alex,%20in%20her%20well-meaning%20way,%20reminds%20me%20every%20time%20we%20bake%20that%20X,%20Y,%20and%20Z%20in%20her%20class%20do%20not%20eat%20chocolate.%20Panic%20ensued.%20Not%20because%20I%20have%20to%20make%20every%20single%20kid%E2%80%99s%20day,%20but%20rather%20because%20what%20usually%20happens%20is%20they%20still%20take%20a%20treat%20and%20then%20maybe%20take%20one%20bite%20and%20toss%20it.%3C/p%3E%3Cp%3EThis%20drives%20me%20nuts.%3C/p%3E%3Cp%3ESo%20I%20starting%20Googling,%20looking%20for%20a%20vanilla%20version%20of%20kiss%20cookies%20(with%20the%20idea%20of%20providing%20both%20choices).%20I%20wasn%E2%80%99t%20happy%20with%20anything%20I%20found,%20especially%20because%20most%20of%20the%20tasty%20looking%20ones%20have%20peanut%20butter,%20which,%20although%20nobody%20in%20Alex%E2%80%99s%20class%20is%20allergic,%20I%20still%20prefer%20to%20not%20use%20for%20school%20parties.%20And%20that%20is%20when%20it%20hit%20me.%20What%20about%20Biscoff?%3C/p%3E%3Cp%3ENow%20I%20am%20not%20in%20love%20with%20Biscoff%20like%20so%20many%20bloggers%20out%20there.%20I%20find%20it,%20quite%20frankly,%20way%20too%20sweet.%20I%20also%20find%20the%20adulation%20of%20it%20to%20be%20kind%20of%20annoying,%20in%20that%20much%20like%20Nutella%20it%20is%20adored%20by%20people%20who%20would%20not%20touch%20anything%20American%20with%20those%20ingredients,%20but%20because%20it%20is%20European%20it%20is%20somehow%20perceived%20as%20better.%20Or%20such%20is%20my%20perception%20anyway.%20But%20I%20had%20a%20jar%20of%20it%20sitting%20in%20my%20pantry%20because%20I%20had%20been%20curious%20about%20it.%20It%20has%20the%20consistency%20of%20peanut%20butter%20with%20a%20faintly%20graham%20cracker%20taste.%20I%20love%20graham%20crackers,%20so%20I%20got%20to%20wondering%20if%20I%20could%20adapt%20a%20peanut%20butter%20based%20recipe%20to%20make%20a%20%E2%80%9Cvanilla%E2%80%9D%20%20Biscoff-based%20cookie%20with%20sprinkles%20and%20chocolate%20in%20the%20center.%3C/p%3E%3Cp%3EBingo!%20It%20worked%20so%20well%20that%E2%80%93confession%20time%E2%80%93this%20chocolate%20addict%20actually%20preferred%20the%20vanilla%20version.%20Which%20is%20not%20to%20say%20that%20the%20chocolate%20ones%20were%20not%20fantastic.%20And%20frankly%20the%20chocolate%20ones%20are%20much%20more%20visually%20striking.%20I%20was%20really%20happy%20that%20I%20chose%20to%20make%20both.%20I%20can%20honestly%20say%20that%20I%20am%20pretty%20sure%20that%20these%20cookies%20were%20the%20most%20beloved%20of%20all%20the%20treats%20I%20have%20ever%20taken%20into%20my%20kids%E2%80%99%20classes.%20The%20vast%20majority%20of%20the%20kids%20were%20crazy%20for%20them.%20Success!%3C/p%3E%3Cp%3EYou%20can%20find%20the%20recipe%20for%20the%20chocolate%20version%20at%20Tracey%E2%80%99s%20site;%20the%20only%20change%20I%20made%20was%20to%20use%20half%20Hershey%E2%80%99s%20Kisses%20and%20half%20Hershey%E2%80%99s%20Hugs,%20the%20latter%20of%20which%20were%20definitely%20preferred%20by%20my%20daughters.%20I%20can%20also%20tell%20you%20that%20I%20used%20Dutched%20cocoa,%20but%20either%20should%20work%20as%20the%20(chocolate)%20recipe%20has%20no%20leavening.%20%20My%20recipe%20for%20the%20vanilla%20version%20is%20provided%20below.%3C/p%3E%3Cp%3EVanilla%20(Biscoff)%20Valentine%E2%80%99s%20Day%20Sprinkles%20Cookies%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%3C/p%3E%3Cp%3ECuisine:%20Cookies%3C/p%3E%3Cp%3EWhisk%20together%20flour,%20baking%20soda,%20and%20salt,%20then%20set%20aside.%3C/p%3E%3Cp%3EWith%20an%20electric%20mixer%20on%20medium-high%20speed,%20beat%20butter%20until%20creamy.%20Add%20Biscoff%20and%20beat%20until%20creamy%20and%20completely%20combined.%20Scrape%20down%20the%20sides%20and%20bottom%20of%20the%20bowl%20as%20needed.%20Add%20sugars%20and%20beat%20until%20light%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20egg%20and%20egg%20white,%20milk,%20and%20vanilla;%20beat%20until%20incorporated.%3C/p%3E%3Cp%3EWith%20the%20mixer%20on%20the%20lowest%20speed,%20add%20the%20flour%20mixture.%20Mix%20just%20until%20combined.%3C/p%3E%3Cp%3EWrap%20dough%20in%20plastic%20wrap%20and%20refrigerate%20until%20firm,%20at%20least%202%20hours.%3C/p%3E%3Cp%3ERoll%20chilled%20dough%20into%201-inch%20balls%20and%20roll%20each%20ball%20in%20sprinkles,%20completely%20covering%20the%20dough%20ball%20with%20sprinkles.%20Place%20about%206%20balls%20to%20a%20cookie%20sheet%E2%80%93these%20will%20spread%20more%20than%20the%20chocolate%20version,%20so%20you%20want%20them%20to%20have%20space%20between%20them.%3C/p%3E%3Cp%3EPlace%20the%20cookie%20sheets,%20with%20the%20balls%2
