"Hawaiian" Wedding Cookies Recipe
Ingredients
- 1 1/2 cups nuts (measure them whole)
- 1/4 cup (1 3/4 oz) granulated sugar
- 2 cups (9 oz) AP flour
- 1/2 t salt
- 1/2 lb (2 sticks) unsalted butter, slightly softened
- 2 t vanilla
- 1 large egg yolk (Medrich lists as optional, but this is the holidays, câmon⦠So I added it)
- 1/2 cup (1.5 oz) powdered sugar, or more, to taste

It was a real pleasure to find this cookie recipe and I certainly liked the little twist you put on it. These treats remind me so much of cookies my MIL bakes too ;o)

%20and%20I%20thought%20their%20rich%20yet%20also%20airy%20texture%20might%20be%20fantastic%20in%20a%20wedding%20cookie.%20Medrich%E2%80%99s%20recipe%20calls%20for%20a%20lot%20of%20nuts%20and%20very%20little%20sugar%20(in%20the%20cookie%20dough),%20giving%20the%20nuts%20a%20starring%20role.%20They%20did%20not%20disappoint%E2%80%93and%20I%20cannot%20stay%20out%20of%20them.%20Sub%20any%20nut%20you%20like%E2%80%93Medrich%20does%20not%20mention%20whether%20they%20should%20be%20toasted%20first,%20raw,%20roasted,%20etc,%20so%20I%20say%20go%20with%20your%20gut.%20The%20macadamia%20nuts%20I%20had%20were%20already%20roasted%20and%20they%20worked%20fine.%3C/p%3E%3Cp%3EOne%20note%20about%20the%20mixing%20method:%20Medrich%E2%80%99s%20book%20is%20full%20of%20alternative%20mixing%20methods,%20i.e.,%20food%20processor,%20stirring%20in%20a%20pot,%20etc.%20I%20am%20so%20used%20to%20always%20just%20using%20my%20Kitchen%20Aid%20mixer,%20so%20this%20was%20a%20change%20for%20me.%20And%20a%20reason%20that%20I%20am%20not%20searching%20for%20a%20bigger%20processor%20because%20doubling%20the%20recipe%20gave%20me%20fits%E2%80%93so%20I%20finished%20in%20a%20mixer.%20They%20came%20out%20fine,%20but%20I%20only%20switched%20to%20the%20mixer%20to%20add%20the%20nuts%20in,%20no%20sooner.%3C/p%3E%3Cp%3E%E2%80%9CHawaiian%E2%80%9D%20Wedding%20Cookies%3C/p%3E%3Cp%3EClosely%20adapted%20from%20Alice%20Medrich,%20Chewy%20Gooey%20Crispy%20Crunchy%3C/p%3E%3Cp%3EEither%20line%20your%20cookie%20sheets%20with%20parchment%20paper%20or%20leave%20them%20ungreased.%20Set%20aside.%3C/p%3E%3Cp%3EFit%20your%20food%20processor%20with%20the%20mincing%20blade.%20Pule%20the%20nuts%20until%20half%20of%20them%20look%20pulverized%20and%20the%20rest%20look%20chopped.%20Move%20the%20nuts%20to%20a%20bowl%20and%20wipe%20out%20the%20food%20processor%20to%20remove%20the%20excess%20oil%20from%20the%20nuts.%3C/p%3E%3Cp%3EPut%20the%20granulated%20sugar%20into%20the%20processor%20and%20process%20until%20it%20is%20fine%20and%20powdery.%20Add%20the%20flour%20and%20salt%20and%20process%20to%20mix.%20Add%20the%20butter,%20vanilla%20and%20egg%20yolk.%20Process%20until%20the%20mixture%20looks%20damp%20and%20begins%20to%20clump.%20Add%20the%20nuts%20and%20pulse%20until%20combined.%20Place%20the%20dough%20in%20a%20bowl%20with%20a%20lid%20and%20cover%20the%20dough%20with%20wax%20paper,%20pressing%20it%20into%20he%20dough.%20Put%20the%20lid%20on%20the%20bowl%20and%20chill%20for%202%20hours%20or,%20even%20better,%20overnight%20(I%20did%20overnight).%3C/p%3E%3Cp%3EThe%20next%20day%20or%20when%20you%20are%20ready%20to%20bake,%20preheat%20the%20oven%20to%20325%20F.%20If%20you%20will%20be%20baking%202%20sheets%20at%20a%20time,%20place%20the%20racks%20in%20the%20upper%20and%20lower%20thirds%20of%20the%20oven.%3C/p%3E%3Cp%3EShape%20slightly%20heaping%20tablespoon%20balls%20of%20dough%20into%20balls%20(Medrich%20says%20you%20can%20also%20do%20crescents).%20Place%20the%20cookies%202%20inches%20apart%E2%80%93do%20not%20do%20more%20than%2012%20cookies%20per%20sheet,%20I%20tried%20the%20first%20time%20and%20the%20cookies%20definitely%20spread%20more.%20Bake%20the%20cookies%20for%2022-24%20minutes,%20or%20until%20%E2%80%9Clightly%20colored%20on%20top%20and%20golden%20brown%20on%20the%20bottom.%E2%80%9D%20Rotate%20your%20pans%20top%20to%20bottom%20and%20front%20to%20back%20halfway%20through%20to%20ensure%20even%20baking.%3C/p%3E%3Cp%3ELet%20the%20cookies%20cool%20on%20the%20pans%20for%205%20minutes.%20Then%20sieve%20powdered%20sugar%20over%20the%20tops%20of%20them%20and%20let%20finish%20cooling.%20When%20the%20cookies%20had%20mostly%20cooled,%20I%20also%20gently%20shook%20them%20in%20a%20bag%20full%20of%20powdered%20sugar%20(requiring%20more%20than%20the%20half%20cup)%20because%20I%20like%20a%20wedding%20cookie%20that%20is%20coated%20in%20powdered%20sugar%20more%20thoroughly.%20Cool%20cookies%20totally%20before%20storing.%3C/p%3E%3Cp%3EThese%20cookies%20store%20well%20except%20for%20the%20fact%20that%20the%20powdered%20sugar%20will%20absorb%20moisture.%20Sieve%20additional%20powdered%20sugar%20over%20them%20before%20serving%20if%20that%20happens.%3C/p%3E){kind=link}
