Triple Chocolate Chip Ice Cream Pie Recipe

  • About 20 - 2" chocolate chip cookies, broken up
  • 2 tbsp. melted butter
  • 1 quart. mint chip softened ice cream
  • White from 3 Large eggs
  • Healthy pinch of salt
  • 7 ounce. marshmallow creme
  • 1/2 c. & 2 tbsp. chocolate chips

Directions

  1. Mix crumbs and butter. Press in pie plate. Refrigeratetill hard. Pack ice cream into crust. Freeze 1 hour.
  2. Place oven rack in top position. Heat 450 degrees. Mix whites and salt till soft peaks form. Add in marshmallow and beat till peaks are stiff and shiny. Mix in 1/2 c. of chocolate chips. Spread over ice cream quickly. Sprinkle 2 Tbsp. chocolate chips. Bake 5 min or possibly till meringue is lightly browned. Serve immediately or possibly cover and freeze up to 2 weeks.
