  • 4 medium fresh green peppers
  • 1 lb lean ground beef
  • 2 cups instant brown rice
  • 2 cups V8 low sodium vegetable juice
  • 2 (14.5 oz) cans sliced stewed tomatoes

Directions

  1. spray slow cooker with nonfat cooking spray
  2. cut tops off of peppers and clean out the inside
  3. In a large bowl, mix beef, rice, and vegetable juice
  4. Stuff 1/4 of the mixture into each pepper
  5. Place peppers in crockpot
  6. Cover peppers with stewed tomatoes
  7. Cook on High for 4 hours or Low 8 to 9 hours
