Beans Tuscany Improv

Beans Tuscany Improv by Rich H

Lacking most of the ingredients for the typical Tuscan Bean recipe I decided to improvise. This dish is quick, easy to make, full of fiber and is low fat.

This dish makes a great side or main dish. It is a tasty blend of Mediterranean spices with a nice olive garnish to top it off.

Banana Bread [Vegetarian - Dairy free]

Banana Bread [Vegetarian - Dairy free] by Damian Lennox

This is a variation from the traditional banana bread, it is friendly to vegetarians and those who can not have dairy. I have used necter in this to subsitiute the milk(you could also use soy milk) but i find the necter makes the banana bread taste more fruity. Feel free to also add walnuts into the mixture.

Coconut Puttu

Coconut Puttu by Padma Priya Manikam

This is simple light breakfast or tea-break steamed snack made out of rice flour that is readily available in the supermarket. It is best mixed with grated coconut and sugar. If wish to eat it with curry, then exclude the sugar. May also include small cut pieces of ripe banana when steaming for a variant in taste.
