Directions

  1. 1. Wash and dry chicken. In Dutch oven, fry bacon till crisp. Remove bacon. Add in chicken, browning well on all sides. Remove to a 2 qt casserole dish as pcs brown.
  2. 2. Cut potatoes lengthwise into 3 inch pcs. Add in to bacon fat. Brown on both sides. Remove and place on top of chicken.
  3. 3. Top potatoes with onions. Sprinkle with poultry seasoning, salt, black pepper, onions and parsley. Top with the bacon.
  4. 4. Cover. Bake at 350 degrees 40 min.
  5. Hint: You may add in 2 c. fresh green beans, broccoli, cauliflower or possibly squash to this dish, if you like.
