  •     Tomato sauce
  • 2 Tbsp. Extra virgin olive oil
  • 1 med Onion, minced
  • 1 x Clove garlic, peeled and
  •     Chopped
  • 10 ounce Can tomatoes and green
  •     Chilies
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  •     Fritters
  • 4 x Large eggs, seperated
  • 1/2 tsp Salt
  • 1/4 tsp Celery salt
  • 2 tsp Parsley flakes
  • 2 Tbsp. Flour
  • 1 c. Cooked minced shrimp
  •     Oil for frying

Directions

  1. 1) To make sauce, heat oil in medium saucepan. Add in onion and garlic; saute/fry till translucent/soft. Add in tomatoes and green chilies,. salt and pepper. Bring to a boil. cover and simmer for 20 min.
  2. 2. Meanwhile prepare shrimp fritters. In a small bowl, beat egg whites untill stiff. In seperate bowl, beat egg yolks, salt, celery salt, parsley flakes, and flour together; mix in egg whites.
  3. 3. Fold shrimp into egg whites.
  4. 4. Heat oil to 375 degrees in deep skillet or possibly a deep fat fryer. Using 1/4 c batter for each fritter, fry a few shrimp fritters at a time till golden brown.
  5. Drain on paper towels.
  6. 5. Serve shrimp fritters with tomato sauce.
