Ingredients

  • Sponge Cake:
  • 5 eggs, separated and brought to room temperature*
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 3/4 cup cake flour
  • simply place the eggs in a bowl of warm water for several minutes
  • Filling:
  • 4 tablespoons all purpose flour
  • 1 cup milk
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla
  • 1/2 cup jam or jelly of your choice
