Peanut Butter Jelly Roll Cake Recipe
Ingredients
- Sponge Cake:
- 5 eggs, separated and brought to room temperature*
- 1/2 cup granulated sugar
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 teaspoon cream of tartar
- 3/4 cup cake flour
- simply place the eggs in a bowl of warm water for several minutes
- Filling:
- 4 tablespoons all purpose flour
- 1 cup milk
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 3/4 cup granulated sugar
- 1 teaspoon vanilla
- 1/2 cup jam or jelly of your choice

,%20I%20bring%20to%20you%20my%20Peanut%20Butter%20Jelly%20Roll%20creation.%3C/p%3E%3Cp%3EPeanut%20Butter%20Jelly%20Roll%20Cake%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%20F.;%20line%20a%2010%201/2%22%20x%2015%201/2%22%20jelly%20roll%20pan%20with%20parchment%20paper%20and%20generously%20grease%20and%20flour%20it.%3C/p%3E%3Cp%3EBeat%20the%20eggs%20yolks%20for%20about%20a%20minute,%20add%20the%20sugar%20and%20the%20vanilla%20and%20continue%20to%20beat%20until%20the%20yolks%20are%20thickened%20and%20develop%20a%20pale%20yellow%20color.%3C/p%3E%3Cp%3ESprinkle%20the%20salt%20over%20the%20egg%20whites%20and%20using%20a%20clean%20set%20of%20beaters,%20beat%20the%20whites%20until%20they%20are%20foamy.%20Add%20the%20cream%20of%20tartar%20and%20beat%20until%20the%20mixture%20is%20stiff,%20but%20not%20dry.%20Gently%20fold%20the%20egg%20whites%20into%20the%20egg%20yolks.%3C/p%3E%3Cp%3ESprinkle%20the%20flour%20over%20the%20top%20of%20the%20egg%20mixture%20and%20fold%20in%20with%20a%20spatula,%20being%20careful%20as%20to%20not%20over%20mix.%20Spread%20the%20batter%20evenly%20into%20the%20prepared%20pan%20and%20bake%20for%2012-15%20minutes,%20or%20until%20the%20top%20of%20the%20cake%20springs%20back%20when%20lightly%20touched.%3C/p%3E%3Cp%3EImmediately%20turn%20the%20cake%20over%20onto%20a%20smooth%20towel%20that%20has%20been%20sprinkled%20with%20powdered%20sugar.%3C/p%3E%3Cp%3EStarting%20at%20the%20short%20end,%20roll%20the%20cake%20up%20in%20the%20towel%20and%20let%20it%20cool%20for%20at%20least%2030%20minutes.%3C/p%3E%3Cp%3ETo%20prepare%20the%20filling,%20whisk%20the%20flour%20and%20the%20milk%20in%20a%20small,%20heavy%20saucepan.%20Place%20over%20medium/low%20heat%20and%20cook,%20whisking%20constantly,%20until%20the%20mixture%20is%20thick%20and%20bubbling.%20Remove%20from%20heat%20and%20place%20the%20mixture%20in%20a%20small%20bowl.%20Cover%20with%20plastic%20wrap%20and%20let%20it%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3EWhisking%20is%20key%20here...we%20don't%20want%20lumps.%3C/p%3E%3Cp%3EPlace%20the%20butter,%20peanut%20butter,%20sugar%20and%20vanilla%20in%20a%20large%20mixing%20bowl.%20Beat%20for%20several%20minutes%20until%20creamy%20(it%20may%20still%20be%20a%20bit%20grainy).%20Add%20the%20cooled%20flour%20mixture%20and%20continue%20to%20beat%20until%20the%20filling%20is%20fluffy%20and%20creamy.%20If%20thin,%20refrigerate%20for%20about%2020%20minutes%20before%20spreading%20on%20cake.%3C/p%3E%3Cp%3EGently%20unroll%20the%20cake%20and%20remove%20the%20towel.%20Spread%20the%20jam%20or%20jelly%20over%20the%20top,%20leaving%20about%201/2%22%20around%20the%20edges.%20Spread%20the%20peanut%20butter%20filling%20evenly%20over%20the%20jelly%20and%20re-roll%20the%20cake.%20Refrigerate%20to%20set%20the%20filling.%3C/p%3E%3Cp%3EBefore%20serving,%20allow%20the%20cake%20to%20sit%20at%20room%20temperature%20for%20a%20few%20minutes.%20Sift%20a%20little%20powdered%20sugar%20over%20the%20top,%20if%20desired.%20Slice%20into%20one%20inch%20pieces%20and%20serve.%3C/p%3E%3Cp%3EI%20used%20blueberry%20preserves%20for%20this%20batch...next%20time%20I'll%20try%20strawberry.%3C/p%3E%3Cp%3ECheck%20out%20what%20kind%20of%20Peanut%20Butter%20and%20Jelly%20Creations%20everyone%20else%20has%20come%20up%20with!%20:)%3C/p%3E){kind=link}
