mocha cupcakes Recipe
Ingredients
- 1 box chocolate cake mix
- oil (called for on box)
- water (called for on box)
- strong coffee
- dash vanilla
- 2 cups heavy whipping cream
- 1/2 cup sugar
- powdered sugar
- 1 tsp vanilla
- chocolate covered coffee beans
Directions
- prepare cupcakes as directed, substituting half the water for the coffee and adding splash vanilla.
- for the frosting, blend cream, sugar, and vanilla together on high until thick. add powdered sugar by the tsp. until its a spreading consistancy.
- spread or pipe the frosting on the cupcakes.
- decorate with coffee beans.
