  • 1 1/2 cups warm water
  • 1 packet yeast
  • 4 cups all purpose flour
  • 1 tsp salt
  • 1/3 cup olive oil
  • I jar Ragu Old World Style Traditional Pasta Sauce
  • 2 cups Mozzarella cheese
  • 1 bunch fresh flat leaf Italian parsley, chopped
  • 1/2 cup black olives, pitted

Directions

  1. Combine the water and yeast in the bowl of a stand mixer; let sit for 10 minutes.
  2. Stir on low and add flour, salt and olive oil.
  3. Mix on medium until the dough pulls away from the bowl; adding more flour if needed.
  4. Roll into a ball, drizzle a little olive oil to the bowl and roll the dough around to get it greasy.
  5. Cover with plastic wrap and refrigerate for at least an hour.
  6. Preheat oven to 400 degrees and spray a mini muffin pan with baking spray.
  7. Spread about a tablespoon full of dough (you may need to use a little less) in each place of your muffin pan. You want it pretty thin, but going up the sides.
  8. Add about a tablespoon of sauce, then a generous sprinkle of cheese.
  9. Bake for 15 minutes, or until cheese is melted and the crust is beginning to brown.
  10. Top with olives and parsley.
