  • 1 pound fresh spinach, stemmed and torn into bite size pcs
  • 1 (11 ounce.) can mandarin oranges, liquid removed
  • 1/4 pound bacon, crisply cooked and crumbled
  • 1 lg. avocado, sliced
  • 1/4 med. size red onion, sliced into thin rings

Directions

  1. Combine vinegar, sugar, mustard, and salt in blender or possibly processor; mix well. Add in lemon juice. With machine running, gradually add in oil. Stir in poppy seeds. Pour dressing over salad; toss gently to coat. Serve immediately. About 6 servings.
